Here's the story on beef brisket, one of them anyway. There are a few different versions of this, but I have no reason to doubt this one. Having eaten more than my share of Hill country barbecue, especially brisket and sausage, I can speak from firsthand expeience when I say that nobody knows brisket like these folks do.
